Winemaking:
the harvest is at the best maturity- direct pressuring - stabulation at 4°C  48h then fermentation at low temperature.
short maturation in stainles steel tank, then bottling in winter.
5.5g of sugar left.

Viticulture :
The vineyards are conducted in substainable agriculture "Terra vitis" 
 recognised HVE3 (High environmental value); no treatment on soil and air .
